Note

Don’t Over-Mix the Meat: Handle the venison gently when mixing in the Curry Starter and forming patties. Over-mixing can result in tough burgers.

Let the Meat Rest: After grilling, let the burgers rest for 5 minutes. This allows the juices to redistribute, keeping the patties moist.

Temperature Matters: Venison is a lean meat, so it’s important to grill it to an internal temperature of 140°F for medium-rare, or up to 145°F for medium, to avoid overcooking and drying out the meat.

Bring Meat to Room Temp: Take the patties out of the fridge 30-60 minutes before cooking to ensure they cook evenly on the grill.

Toppings Make a Difference: The smoky bacon pairs perfectly with the spiced venison. Don’t skip it, and feel free to add your favorite toppings for even more flavor contrast.

Frequently Asked Questions

Expand All:
Can I use ground beef instead of venison?

Yes, you can substitute ground beef, but the flavor profile will be richer with venison due to its leaner, gamey taste. Curry Starter will still add great flavor to any type of ground meat.

What if I don’t have Curry Starter?

You can substitute with your own blend of garlic, ginger, cumin, and curry powder. However, Curry Starter adds a unique, balanced flavor that’s hard to replicate and is what makes this recipe so easy to make.

How do I keep venison burgers from drying out?

Venison is very lean, so be sure not to overcook it. Grill to a medium temperature (140°F to 145°F), and let the burgers rest for 5 minutes after cooking to keep them juicy.

What’s the key to a juicy venison burger?

Avoid over-mixing the meat, don’t overcook the patties, and let them rest after grilling. These steps ensure the venison retains its moisture and tenderness.
