Palak vs Saag: Palak is the Hindi word for spinach and Saag is a general term for leafy greens so can be mustard greens, fenugreek leaves, or even collard greens.

Instructions

  1. Add 8 ounces curry starter to a sauté pan and add tikka masala, keema masala and garam masala powders. Stir until fragrant.
  2. Add one can 14 oz diced tomatoes and simmer until the oil separates
  3. Add one cup water and simmer until the oil separates
  4. Turn off the heat and cool slightly
  5. Pulse blend some or all of the curry in a blender.
  6. Add 1/4 cup heavy cream (tempering the heavy cream if needed) and pulse one to two times to combine.
  7. Return curry to the saucepan and simmer low. Add 10 to 16 ounces of fresh chopped spinach and 16 ounces of. paneer (cooked or uncooked.) . Simmer for 10 minutes. Serve over rice, with non-bread or with my favorite paratha bread

Note

Add Kasuri methi crushed on top to garnish and a squeeze of lemon juice.

Serve with Rice or warm naan. Add a side of cucumber raita if you accidentally made it too spicy.

Add 1/4 tsp chili powder (mirch) if you like it a little spicier.
